Chocolate & Coffee Truffle Pots

It’s always lovely having friends over for dinner, chatting about latest events over a nice glass of wine, however thinking about what to make for them can sometimes be a difficult task. I’m always on the look out for new and exciting meals to cook and recently discovered this delicious recipe from BBC Good Food. This website is always a great source of information, as you can find many fabulous creations and gain lots of inspiration and it has certainly helped me out a few times.

The chocolate and coffee truffle pots are not only an easy dessert to make, they also look fantastic served in cute coffee cups. I served mine in espresso cups, which I found were the perfect size, as this is such a rich and decadent dessert. You can also add your favourite spirit, such as rum or brandy if you prefer and I’m sure your guests will absolutely love them, mine certainly did.

Ingredients ~ Serves 6

200g dark chocolate

100ml strong coffee

4 tablespoons of favourite spirit

400ml double cream

2 tablespoons golden caster sugar

cocoa powder to serve

Method

  1. Break chocolate into small chunks and tip into a bowl with the coffee and alcohol. Bring 250ml of the cream to the boil, then pour over the chocolate mixture and stir until the chocolate has melted. Divide the mixture between 6 coffee cups and leave to set overnight in the fridge.
  2. To serve, whip the remaining cream with the sugar until just set. Spoon the cream onto the chocolate pots and serve dusted with cocoa powder. Enjoy!
